Key-Lime Mousse
Blend five simple ingredients for this refreshing vegan key lime mousse recipe.

2 medium or 3 small limes

2 avocados

1 cup cashews (soaked overnight)

1/4 cup maple syrup

1/2 teaspoon fresh ginger, grated

Instructions

Half both avocados, remove the pits and skin, and place into the food processor

Using the grater, grate 2 tablespoons worth of skin from the lemons to use as a lemon zest garnish

Half the lemons and, using the handheld juicer, add the juice from the lemons into the food processor

Drain the cashews; then add to the food processor

Add the maple syrup and grated ginger then run the processor until the mixture is smooth (scrape sides every minute or so to ensure even distribution of ingredients); about 3 minutes should be fine.

Serve spoonfuls of mixture into serving bowl or glass of your choice
