Creamy Tomato Soup

A very flavorful and health conscious recipe for creamy tomato soup.

This recipe provides the following essential nutrients: vitamins A, C, E, K; thiamine, niacin, folate, magnesium, phosphorous, copper, and potassium.

Ingredients
  • Juice from 1 orange

  • 1/2 cup cherry tomatoes

  • One 16oz can diced tomatoes or 2 cups diced fresh tomatoes

  • 1/2 cup sun-dried tomatoes

  • 1/2 large red bell pepper

  • 2 cloves garlic

  • 1 large carrot

  • 1 green onion

  • 1/2 cup raw cashews

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp crushed red pepper

  • 5-7 fresh basil leaves (leave half for garnish)

Special Equipment

  • Vitamix

  • Handheld Juicer

  1. Put all ingredients into Vitamix and blend until steaming, usually a few minutes

  2. Once steaming add the fresh basil and continue to mix for another minute

  3. Pour into bowl and garnish with fresh basil leaves
