Creamy Tomato Soup
A very flavorful and health conscious recipe for creamy tomato soup.
This recipe provides the following essential nutrients: vitamins A, C, E, K; thiamine, niacin, folate, magnesium, phosphorous, copper, and potassium.
Ingredients

Juice from 1 orange

1/2 cup cherry tomatoes

One 16oz can diced tomatoes or 2 cups diced fresh tomatoes

1/2 cup sun-dried tomatoes

1/2 large red bell pepper

2 cloves garlic
-
1 large carrot
-
1 green onion

1/2 cup raw cashews
-
1/4 tsp salt

1/4 tsp black pepper
-
1/4 tsp crushed red pepper

5-7 fresh basil leaves (leave half for garnish)

Instructions

Put all ingredients into Vitamix and blend until steaming, usually a few minutes

Once steaming add the fresh basil and continue to mix for another minute

Pour into bowl and garnish with fresh basil leaves
