Carrot Cake Balls
With all the flavor, but not the extra sugars and starches, these carrot cake balls are a tasty raw vegan dessert.

2 medium carrots

1/2 cup desiccated coconut (plus extra for rolling)

10 large soft medjool dates, pitted

1/4 cup raw cashews

1/4 cup raw walnuts

1/2 cup quick oats

1/2 tsp cinnamon

1/4 cup raisins

Peel, wash, and roughly chop carrots; discard peels

Add carrots, dates, walnuts, oats, cashews, coconuts, and cinnamon into blender

Blend until dough forms; about 40- 60 seconds

Remove blade and stir in raisins to dough with a spoon; mixing well

Place extra coconut onto plate to use for rolling

Roll spoonfuls of blended mixture into balls

Roll balls into plate of coconut; covering each ball entirely
